I have talked to quite a few people lately about honey, and what I have found is that folks don't know that honey comes in different colors.  Which is better? Dark, medium, or light honey?  The answer is YES!

Honeybees fly, on average, about 2 miles away foraging for nectar, which means they cover an area of approximately 8,044 acres! There is a wide variety of blossoms in that much area from which they harvest the nectar and pollen.

In the spring, in Georgia, the honey is light due to the bees foraging the clover fields.  You might be most familiar with this light, mild tasting honey that is closest to what you might find in a grocery store.  This honey contains clover, wisteria, honeysuckle, early peach blossoms, and these type plants.  Later on in the summer, the bees are finding other types of flowers such as blackberry, blueberry, and the like.  In the fall, there is an even wider variety of things blooming, from the local cotton crops, to sunflowers, etc.  The different flowers result in different color honey, which runs with the seasons.

The lighter the honey, the milder the flavor.  Dark honeys are robust and bold tasting, for hardcore honey lovers.  The dark honey is also higher in antioxidants...which is an added benefit.  So the answer to the question is this:  What flavor do you like?  When are your allergies most active?  I think you will find that there are benefits to any type honey!
